Paleo Pumpkin Pie Ice Cream

I don’t know about you, but I am obsessed with pumpkin pie flavored food right now! I am loving this fall flavor, and it has me so excited for some cooler weather! I whipped up this ice cream in 10 minutes, put it in my ice cream machine, and VOILA… the best ice cream ever. SO. GOOD. Don’t believe me? Try it for your self!

Made with coconut milk, pumpkin, and sweetened with maple syrup, this recipe is what you have been looking for! It is so creamy, you wouldn’t even know that it’s dairy free and vegan.

PUMPKIN PIE ICE CREAM

  • 2 cans full fat coconut milk
  • 1/2 cup 100% maple syrup
  • 1/2 cup pumpkin
  • 1/4 tsp Himalayan salt
  • 1/2 tbsp cinnamon
  • 1/2 tbsp pumpkin pie spice

DIRECTIONS

In a blender, combine all ingredients. Blend on high for about 40 seconds. Ice cream mixture should be creamy and well combined. If using an ice cream maker, pour the mixture into the machine and run for about 25 minutes or until done. Remove from the machine, and freeze for an additional 2-3 hours prior to serving. If you do not have an ice cream maker, pour ice cream in an air tight container and freeze overnight.
