PALEO TAHINI COOKIE BARS

So happy to bring to you one of my new favorite recipes ever!! Paleo Tahini Bars wooooo! These bars are filled with healthy fats, nutrients, and don’t forget… CHOCOLATE (my favorite part haha)!

Honestly, they are so easy to make you will be pinching yourself that you haven’t made these earlier! Throw everything in a bowl… and watch the magic happen.

For those of you who aren’t a fan of peanut butter and chocolate, or almond butter for that matter, tahini is the perfect option because you cannot taste the flavor after its baked, it only leaves a slight warm flavor. If you try the dough, there will be a strong tahini taste, but once cooked, it’s almost completely gone! Amazing!!

The tahini brings a subtle nutty flavor, while the chocolate and salt make the perfect duo in aiding with this combo! The bars are super soft and the texture of these is just right. I hope you love these tahini magic bars as much as I do!

Paleo Tahini Cookie Bars

Ingredients

  • 1/2 cup tahini
  • 2 eggs
  • 1 tsp vanilla extract
  • 3/4 cup coconut sugar
  • 1 cup almond flour
  • 1/3 cup coconut flour
  • 1 tbsp coconut oil
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup dark chocolate chips

Instructions

  1. Pre-heat your oven to 350 degrees F. Line an 8×8 baking pan with parchment paper and set aside.
  2. Using a mixer, blend together wet ingredients. Mix in dry ingredients until combined. Add chocolate chips last.
  3. Press dough into the prepared pan. The batter will be thick.
  4. Bake until golden brown, about 18-22 minutes.
