
What is summer without peaches and cobbler?! Sweet peaches are in season right now, which means my house is stocked with them, which also means we can’t always keep up with the rate that they are ripening! I had three peaches about to go bad, which inspired this PERFECT peach cobbler!
Not only did I use up some peaches, but I made the house smell amazing too, and created a pretty amazing dessert in the making! This peach cobbler is grain free, and you wouldn’t even know it! It’s packed with healthy fats, fiber, and rich in nutrients!
The granola-like topping is super versatile, and if you don’t like something in the ingredients list, you can easily swap it out for another nut, or seed. The topping is so good, it could easily be baked and made into a stand-alone granola recipe!
You can top the cobbler with ice-cream, or you can eat it straight out of the skillet by itself. It is such a good summer treat… I hope you love it as much as I do!

PERFECT PALEO PEACH COBLER
INGREDIENTS
TOPPING:
- 1/2 cup chopped almonds
- handful of pecans
- 1/2 cup almond flour
- 2 tbsp coconut oil
- 2 tbsp 100% maple syrup
- 1/2 tsp vanilla extract
- 2 tbsp flax seed
FILLING:
- 3 peaches sliced
- 2 tbsp arrowroot starch
- 2 tbsp 100% maple syrup
- 1/2 tsp cinnamon
- dash of vanilla extract
- pinch of salt
- juice from half lemon
INSTRUCTIONS
- Pre-heat oven to 350 degrees F. Grease a small 6-inch iron skillet or glassware pan and set aside.
- For the filling, slice peaches into small slices and put into a small bowl. Add arrowroot starch, maple syrup, lemon juice, cinnamon, salt, and vanilla extract. Mix until well combined and set aside to thicken while you make your topping.
- Put nuts into a blender and chop into small pieces. Mix the rest of the topping ingredients in a medium-sized bowl, and add in nuts. The mixture should be thick, and crumbly.
- Pour peaches into prepared skillet, and crumble the topping over them. Cover the peaches fully.
- Place the skillet in the oven for 35-40 minutes, or until golden brown and bubbling.
