The BEST Grain-Free/Paleo Granola

My all-time favorite granola recipe… made grain-free, paleo, and filled with nuts, seeds, and coconut! You won’t be able to stop eating this! IMG_7589

Recently, I tried grain-free granola from the grocery store, and it was great, yet the price tag on the bag was, well… not so great. I ran home, grabbed some supplies from my cupboard, and tried to recreate grain-free granola, that I could actually afford… anybody else on that train?! Anyways, the result was better than I could have hoped! My family loved it, and everyone said it “tastes like real granola!”

The word “grain-free” or “paleo” tends to scare people off sometimes, but it is actually really simple. Just adding maple syrup, crunchy nuts, and coconut leaves you with a texture just like real granola. So, don’t be scared off by the title, I promise you, it is super easy to make!

This granola is amazing on yogurt, smoothies, or just taken by the hand-full (how I prefer it). It’s a great start to your morning, or afternoon, or pre-dinner snack… or whenever you so crave this amazing stuff!

The Best Grain Free/Paleo Granola


Ingredients

  • 2 cups of raw unsalted nuts (I used a mixture of almonds and pecans)
  • 1/3 cup of pepitas
  • 1/2 cup of unsweetened coconut flakes (I used some shredded and some chips)
  • 1/4 cup of fine-ground almond flour
  • 1 tsp of cinnamon
  • 1/4 teaspoon of Himalayan pink salt
  • 1 tbsp of coconut oil
  • 1/4 cup of maple syrup
  • 2 tbsp of honey
  • 1 teaspoon of vanilla extract

Instructions

  1. Preheat oven to 300°F. Line a baking sheet with parchment paper, and set aside.
  2. Add 1 cup of nuts into a blender, and pulse until chopped. Remove, and repeat with the other 1 cup of nuts.
  3. Combine the rest of the ingredients in a medium-sized bowl, and stir until mixed thoroughly and everything is coated well.
  4. Dump the mixture onto the prepared cookie sheet, and spread to make an even layer, pressing where needed.
  5. Bake in 10-minute intervals, rotating the granola every 10 minutes. Cook for about 30 minutes, or until golden brown. Be careful and keep a close eye, as it can go from golden to burnt in minutes.
  6. Remove from the oven and let it cool completely before breaking it into pieces. Store in an airtight container and enjoy!
