did I mention it’s so easy? Well it is!!!!
This chocolate chip skillet cookie is the best for when you want a soft chocolate chip cookie… but you don’t want to stand by the oven for an hour waiting for all your batches to bake. Anyone else with me?? I make this when time is crunched, and it is a hit every time! Seriously this is a family favorite, and it vanishes in minutes!
You can top this with ice cream, and just dive in with some spoons (like my fam does haha), or you can serve it in bowls and make a sundae! So versatile and SO yummy!


Now onto the recipe….
Paleo Chocolate Chip Skillet Cookie
Ingredients
- 2 cups fine-ground blanched almond flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup raw honey
- 1/4 melted coconut oil (plus a little extra for your pan)
- 1/2 teaspoon vanilla extract
- 1 large egg (haven’t tried flax egg yet)
- 1 cup of dairy-free chocolate chips
- Optional: Dairy-free ice cream for topping
Instructions
- Pre-heat oven to 350ºF. Grease the preferred skillets of your choice (two 6 inch, one 10, or one 12 inch). Set aside.
- In a large mixing bowl, combine almond flour, baking soda, and salt. Mix together until well combined.
- In a small mixing bowl, combine your melted coconut oil, egg, vanilla extract, and honey, and mix on medium speed until everything is evenly distributed.
- Slowly add your wet ingredients into your dry, and stir until it is all well combined, about 20 seconds.
- Add your chocolate chips, and hand fold them in.
- Grease your iron skillet with about 1/2 teaspoon of coconut oil, making sure you get all the sides and edges.
- Transfer your cookie dough to your skillet, you can use two 6inch, one 10 inch, or one 12 inch. I only had a 12 inch available, so that is what I used. For a thicker cookie, use the two small 6 inch skillets.
- Bake your skillet(s) for 12- 25 minutes, depending on what size skillet you used (12 for 12 inch, 20-25 for the 6inch).
- Remove from the oven after a fork placed in the middle comes out clean. Allow it to cool for 5 minutes before topping with ice cream, chocolate sauce, or your favorite sundae toppings… or just eat in plain with a spoon like me cause it’s so good!!!!!
